How confusing is life when one day we are told to use Lard, the next don’t use lard. Don’t eat sausages they will give you cancer. My local butcher almost stopped his normal order as the sales for sausages hit a record low.
Is that because we know best or is it because we have no real idea of what to eat or drink or use for cooking so we follow the crowd?

The answer is just that, we have no real idea of what to consume. If we did, we would all be eating organic food and making sure that everything we ate was safe to be consumed. As it is, very few eat organic and it seems not many of us are interested in how safe our food is or where it originates from.
I can remember my grandfather eating bread and dripping on a Sunday afternoon, and enjoying a long and healthy life. Now it seems most of us are over weight and do very little about it. Oh we do make as many visits to our Doctor for advice, and he happily hands out a tablet for this and a potion for that. I can’t ever remember a Doctor saying to me, eat Organic food, drink plenty of water and take exercise at least 4 times a week every week.
I do have to admit I was once told to do more exercise, which I laughed at because I was playing tennis 3 times a week and boxing on the other days. I also consumed plenty of organic foods and drank plenty of water, I still do!
The reason I went to my Doctor was because I felt my testosterone levels were low. The nurse took it upon her self to inform the Doctor that the only reason I wanted testosterone was to beef up my levels of the male hormone so I could be stronger. How do I know this? Well she made the school boy error of leaving the door slightly a jar so I heard the story. The NHS Doctor rejected the idea so I went private. Yes my levels were really low and he advised me to have the injection which helped my libido which was the real reason I went in the first place.

So back to which fat is best to cook with. Use a lard which is what I always use. The reason is when you cook with a cheap fat such as corn oil or a sunflower oil, the oil undergoes a series of complex changes due to being heated.
The heat brings with it a chemical change, so the once safe oil now changes into an unsafe omega 6 by forcing out the omega 3, which is much safer to be consumed. Oxidation of the heated oil is what changes the oil so look for an oil that is safe to heat such as coconut oil or lard. On a personal note, I still use lard or a grass fed butter to cook with.
The bottom line is, do your research because nobody looks after you, better than YOU.
