Food as a Vegan

Friday 9th February

So after watching the entire country complaining about the snow, it started snowing here. It’s been snowing for 6 hours now and it probably won’t stop. What pisses me off is that I had to go out today because I had an appointment for my cat this morning so I had to get up early and go out with the heavy transport cage and my cat while it was snowing. I just want to go back to sleep right now. Since we got back home, my cat (Raja) is super clingy, he didn’t even want to let me cook. I think it’s quite understandable since it was his first appointment and he got neutered. Since I adopted him back in October I only left him once for the weekend just before Halloween so I didn’t have him for a month so he didn’t really care as my entire family was still with him and I only left for 2 days.

I was super hungry at lunch so I ate rice noodles with vegetables and a kidney beans steak, I drank my usual smoothie with a banana, frozen berries, oats and soy milk. While I eat it’s always a smoothie, green tea with lemon juice or hot chocolate with almond milk. I don’t like soy milk in hot chocolate because the taste is too strong but I love it in my smoothies because I can’t taste it and I don’t need to taste it as the flavour of the fruits is already perfect.

 

Saturday 10th February

Food as a VeganSo Raja is really clingy, more than usual, but once my dogs woke up he left me to go play with them. I’ve been drinking tea since I woke up so at lunch I wasn’t really hungry. I just ate a salad with corn, mushrooms, red bell pepper, spinach, beans, and arugula. I made some sauce with soy cream, mustard, olive oil and harissa and it’s super tasty; when I replace the harissa with lemon juice it tastes a lot like mayonnaise.

My mom knows how much I love spicy food so she took some leftover red mini chili peppers and put them in a jar with thyme and a lot of olive oil. She let the jar alone for 3 days (shaking it a bit sometimes) and I tried at lunch. At first it only taste like normal olive oil but when I swallowed it the chili literally burnt my mouth so much I started coughing. It was really unexpected as I was expecting slightly spicy olive oil. I might use this oil for the new few days instead of normal oil as it’s good and spicy.

 

I don’t know if I have some frozen berries left or not but I’m kinda in the mood for a smoothie (again), if I don’t have any berries left I might go for 2 bananas and some oats with soy milk.
